We follow age old traditional hand-churned bilona Vedic method of making A2 desi cow ghee. This is a time-tested process that has been used in India for centuries. Here’s how it works:

Selection of Desi Cow Milk: The process starts with selecting the A2 desi cow milk from healthy and well-fed cows. The milk we use are from Sahiwal cows who are given feed organically grown in the own fields by our farming community partners using vermi-compost. This milk is considered to be of high quality as it is high in A2 beta-casein protein, which is believed to have several health benefits.

Curdling the Milk: The milk is then allowed to curdle overnight using either buttermilk or curd. This process is done to separate the curd and whey.

Churning the Curd: The curd so formed is then churned manually using a wooden churner, also known as bilona. The bilona is a long wooden rod with a conical shape at the bottom. The curd is churned by rotating the bilona clockwise and anticlockwise.

Separating The Butter: The churning process causes the fat content in the curd to separate from the liquid. The fat, also known as butter, is collected and washed with cold water several times to remove any remaining traces of whey.

Heating the Butter: The butter is then heated in a heavy-bottomed mitti handi (earthern pots) on very low heat using cow dung cakes, until it melts. The process is very slow and takes several hours to complete. The heating process helps remove any remaining traces of moisture.

Clarifying the Butter: The melted butter is then clarified by removing the foam that forms on top of the melted butter. The clarified butter is then collected in a separate container and allowed to cool.

Straining the Ghee: Once the ghee has cooled down, it is strained through a muslin cloth to remove any impurities. The hand-churned bilona method of making A2 desi cow ghee is considered to be superior to modern methods of making ghee, as it helps retain the natural nutrients and flavor of the milk. The process is also believed to be more eco-friendly, as it doesn’t require any electricity or machinery.

Since Vedatman oils are extracted without heating or any chemical processing, the presence of natural compounds is not unusual.
